ANSC 6423 - Food Quality Assurance Credit Hours: 3 Students will gain a comprehensive knowledge of quality control procedures in various stages of food processing. Assessment and control of microbial, nutritional, and eating qualities will be individually emphasized. Special attention will be focused on the importance of HACCP principles in food quality assurance as well as federal and state regulations. During laboratory sessions, students will gain hands-on experience in food quality assessment and control.
