HORT 3823 - Food Processing Credit Hours: 3 Students become knowledgeable of the physical and biological phenomena which cause food deterioration and acquire practical experiences with the techniques of good preservation by canning, freezing, sugar concentrates, chemical additives, pickling, fermentation and ionizing. Hands-on experiences with food processing equipment are provided. Knowledge of the operation and management of school canning plants is acquired.
